Moroccan Mint Tea Recipe

Super tea to enjoy after a meal.

Ingredients

2 teaspoons of Moroccan Mint Tea
Big handful of fresh mint
3 tablespoons of sugar / honey
500ml water
Teapot & some small heatproof glasses

Directions

Put the tea into the teapot and pour in a cup of freshly boiled water, swirl to warm the pot and rinse the tea. Strain out and put to one side, you will need this.
Add another cup of boiled water to the pot, swirl and this water you discard ( it can be bitter ) reserving tea leaves in pot. Return the first cup of tea that you set aside to the pot, this one will strengthen the tea & add flavour. Then top up with freshly boiled water and let
steep for a couple of minutes. Stir in sugar (to taste) and mint sprigs and steep a few
minutes more. Serve in small heatproof glasses.
Be sure to lift the teapot high above the glass while pouring; this aerates the tea which should give a little froth on the top of your glass.
Serve with friends.
