Brewing the best cup. Use just one teaspoon per cup. Boiling water is a little fierce for green tea so, for just-off the boil water, simply boil the kettle, let it sit for two to three minutes, then brew your tea, 3+ mins, a little honey or sugar, no milk.
MOROCCAN MINT TEA
This is our take on a classic tea recipe.
2 teaspoons of Moroccan Mint Tea
Big handful of fresh mint
3 tablespoons of sugar / honey
Teapot & some small heatproof glasses
Put the tea into the teapot and pour in a cup of freshly boiled water, swirl to warm the pot and rinse the tea. Strain out and put to one side, you will need this. Add another cup of boiled water to the pot, swirl and this water you discard ( it can be bitter ) reserving tea leaves in pot. Return the first cup of tea that you set aside to the pot, this one will strengthen the tea & add flavour. Then top up with freshly boiled water and let steep for a couple of minutes. Stir in sugar (to taste) and mint sprigs and steep a few minutes more. Serve in small heatproof glasses. Be sure to lift the teapot high above the glass while pouring; this aerates the tea which should give a little froth on the top of your glass. Serve with friends.
